A New York brunch with truffle scent

A symphony of flavours welcomed the guests of Panorama d' Italia in New York at the headquarters of the Italian truffle manufacturer company known all over the world: Urbani.

At the Truffles Academy, on West End Avenue, Umbria was at home with Caprai wines that accompanied an extraordinary tasting of dishes prepared by the star chef Vito Mollica and declined on the notes of black and white truffle.

The American public, a great passionate about the tuber that the world envies us, crowded the room ready to taste the generous portions prepared by the Italian chef of Lucanian origins, but transplanted in Florence where he made famous the restaurant Il Palagio Hotel Four Season.

And then there is the crouton with burrata and truffles of a thousand and one nights, the egg in shirt with pecorino cheese fondue and scorzone truffle flakes (the "winter"truffle). And again: the lukewarm octopus salad with potato cream and sweet garlic sauce followed by pumpkin risotto and truffle cream.

To conclude in beauty a very Italian first course, or rather very Roman: cavatelli cacio and pepper, with a range of flakes of black truffle. A must be a beautiful red of Montefalco or a greek of the Umbrian mountains, signed Caprai. Above the goblets for a day started in the best way.
